In a bowl add fish, salt, pepper, tandoori masala, lemon juice, ginger, and garlic paste mix until combine. Cover and refrigerate for at least 30 minutes.

Meanwhile soak the rice in warm water. Bring water to a boil in a large pot along with salt, cardamom, cinnamon, bay leaf, and cloves. Add the rice stir a few time and let cook until 95 percent done. Drain and set aside.

Add salt and food colour to the potatoes and mix. Heat oil and ghee in a large pot with a heavy bottom, fry the potatoes for 6-7 minutes, remove and set aside.

In the same pot with the remaining oil and ghee fry the onions until light brown colour. Add the marinated fish , gently stir and cook for 7 minutes over medium high heat. Add the fried potatoes with a bit of water, stir then add coriander, mint, and green chillies . Add half cup of water and gently mix.

Sprinkle the cooked rice over the fish, drizzle some food colour mix with a bit of water then reduce the heat to medium low and let cook for 10-15 minutes or until completely done and no more water left in the bottom.
