In a large mixing bowl, add water, yeast and sugar, stir and let sit for 5-10 minutes.

When the yeast mixture gets foamy, add flour, salt, olive oil and egg. Using a wooden spoon, mix the dough, then switch by hand and knead for 5 minutes. Cover with a plastic wrap and a kitchen towel, keep in a warm place to rise for 1 hour or until doubled in size.

Meanwhile, heat oil in a large pan, add the chicken and cook until the water dries. Add salt, pepper, Italian seasoning, cayenne pepper, paprika, and garlic powder. Mix, add the pasta sauce, cover and cook until liquid reduces. Add a handful of shredded cheese, stir and remove from heat.

Sprinkle some flour on your working surface, divide the dough into 8 equal sizes, roll the dough into balls, dust with flour, cover with a kitchen towel and let rest for 10 minutes.

Preheat the oven to 450c F. Take one ball at a time, roll into a 10 inch circle. Fill half of the dough with cheese, place about 2 tablespoons of chicken over the cheese, then sprinkle some more cheese on top of the chicken, then fold and press the edges to seal. Brush with egg wash and sprinkle with Italian seasoning, bake for 20-25 minutes or until golden brown.
