Grease a 10x8 inch glass dish with butter and set on a side.

In a large sauce pan, add the pitted dates along with sugar and water. Cook over medium-low heat for 15-20 minutes or until the date softened and almost melted into chunks. Squeeze a drop of lemon juice to prevent it from crystallise and sticky. Remove from heat stir in two tablespoons of melted butter and set on a side.

Whisk together flour, baking powder, and salt set on a side. In a large mixing bowl, beat the eggs add almond extract, vanilla extract, melted butter and sugar. Mix with a hand whisk. Gradually add the flour mixture little bit at a time until combined. At the end add the whole milk to loosen the batter.

Pour half of the cake batter into the prepared cake pan, then add the cooked dates, spread evenly, then dollop the remaining batter on top of the dates, sprinkle with chopped almond and smooth the top and bake for 30 minutes or until a butter knife inserted comes out clean.

Let the cake cool for half an hour before serving.

Serve warm with tea or coffee.
